When Life gives you jumbo scallops

When Life gives you jumbo scallops, kimchi and Korean fresh noodles, you make a pot of soup inspired by the flavors found in Koreatown of Los Angeles.

It can be enjoyed any day of the year, though especially on colder-overcast days like today.

You can make your own broth or use any clear low-sodium vegetable broth from the store, reheat, cook scallops and kimchi in it for added flavor, add cooked noodles or cook them in the broth, add fresh kimchi and scallions, et voilà!
